Crown of kings

  • 350 grams of flour

  • 50 grams of powdered sugar

  • 170 grams of melted butter

  • 4 eggs + 1 egg yolk

  • 1 teaspoon of salt

  • 2 tablespoon of warm water

  • 20 grams of baker's crumbled yeast

  • sugar grains

  • 200 grams of candied fruits cut in small dice


  • a Savarin mold  (easy to recognize, it has a hole in the middle)
  • a pastry brush
  • one bean


There is not only in the Twelfth-Night Cake we can find the bean. The Crown of Kings can hide one too and it is also famous !
Adapted from one Brioche Tupperware recipe, this Crown of kings can be served with ice cream, chocolate mousse or fruit salad.

Caution :
Do not forget we aren't allowed to cook alone ! An adult must stay with us. See Instructions.

  1. In a small cup, place the crumbled yeast. Pour two tablespoons of warm water.

  2. Melt the butter in the microwave oven at very low power.

  3. In a large bowl or the bowl of your food processor, pour the flour, salt, sugar, four whole eggs, melted butter and yeast. Mix well.

  4. Add the candied fruit (keep a bit aside for later) and mix again.

  5. Make a ball and put over a cling film and one more over the bowl or the bowl of a mixer. Let the dough rest overnight in the refrigerator.

  6. The next day, roll out the dough on a square floured surface and fold it in four.

  7. Spread again the dough into a strip of the width of an adult's hand and place the bean.

  8. Roll the dough onto itself and cut it into eight pieces of the same size.

  9. Place the pieces in a well-buttered Savarin mold  and cover it with a clean dish towel.

  10. Place the mold near a heat source (fireplace, heater ...) and let stand for four hours.

  11. The time coming, mix one egg yolk with two teaspoons of water in a cup and, using a pastry brush, gild the top of the sweet bun.

  12. Strew the brioche of sugar grains and remaining candied fruits.

  13. Cook at 175°C in non preheated oven for 30 minutes.
