Yule log

It's time to cook the yule log. This year, I'll prepare it with raspberries and chocolate.

I don't worry about that because I have an easy recipe to follow.

 Buche de noel

Caution : Do not forget we aren't allowed to cook alone ! An adult must stay with us. See Instructions.

Ingredients :

To make the biscuit to roll :

  • 60 gr of flour
  • 40 gr of cornstarch
  • 100 gr of powdered sugar
  • 4 eggs
  • 50 gr of butter

The filling :

  • 1 jar of a very good raspberries jam, home made or bought in a store

To make the cake frosting :

  • 200 gr of chocolate
  • 200 gr of single cream
  • a small punnet of fresh raspberries
  • icing sugar

Steps :

To prepare the biscuit :

1/ Turn on the oven at 180° celsius.

2/ Break the eggs and separate the yolks from the whites in two distinct bowls.

3/ Beat the egg whites until they are very stiff.

4/ In the other bowl, mix the sugar with the egg yolks until the mixture goes pale.
    Add the flour and cornstarch.
   
Add then the melted butter and the egg whites.

5/ Butter a flat rectangular cake pan.

6/ Pour in the preparation.

7/ Put it in the oven during 8 or 10 minutes.

8/ Before taking out the cake pan of the oven, take a clean cloth, put it under the water and press of it well.

9/ On a clean kitchen worktop, unfold completly the wet cloth.

10/ Take out the cake pan of the oven.

11/ Unmould the biscuit on the wet cloth in the lengthwise.

12/ Fold the four sides of the cloth over the biscuit and roll the whole.

Filling the biscuit :

13/ When the biscuit is cool, unroll it and take off the cloth.

14/ Spread the jam on the biscuit.

15/ When it's done, roll again the biscuit.

16/ Wrap the  biscuit with clingfilm.

Frosting cake :

17/ Melt the chocolate with the single cream in the bain-marie (to know about the bain-marie, go and see the truffes au chocolat recipe).

18/ Turn off the heat and add a knob of butter in the melted chocolate. Mix well. The mixture must be smooth.

19/ Take off the clingfilm fron the rolled biscuit.

20/ Put the rolled biscuit on a baking grid above a dish.

21/ Recover it with melted chocolate and wait until it solidifies by cooling.

22/ Decorate the yule log with icing sugar and raspberries.

Keep it in the refrigerator until the moment to eat.

Of course, if you don't like raspberries, you can choose another taste. You just have to change the jam and fruits. You could choose orange jam for example, with zests to decorate, or redcurrant jam with fresh redcurrants... You can decorate with candies too . Most important is to have fun.
