The Twelfth Night cake

Hello my friends,

I'm back. As in France, it's not too late to eat the Twelfth Night cake, I've decided to share my recipe with you.

Ingredients :

  • 2 "all butter" puff pastes
  • 125 gr of almonds in powder
  • 100 gr of sugar in powder
  • 125 gr of melted butter
  • 2 eggs for the preparation and 1 egg yolk to "paint" the Twelfth Night cake
  • 1 soup spoon of rum

Steps :

1/ Preheat the oven in 180° Celsius.

2/ Melt the butter in the microwave during one minute, at low-power.

3/ In a bowl, mix the almonds in powder, the sugar and the two eggs.

4/ Add the melted butter and mix well.

5/ Add the rum.

6/ Unroll the first puff paste on a large baking sheet.

6/ With a special cooking brush, moisten the edges of the puff paste. This action will allow to join perfectly the edges of the puff pastes by cooking.

7/ Pour the preparation with almonds in the center of the puff paste. Then, spread it by stopping before two centimeters of the edge.

8/ Place the bean of the Twelfth Night cake in the preparation but not in the center, this way you'll avoid to find it when you cut the Twelfth Night cake to share it.

9/ Cover the second puff paste over the first and, with your fingers, join the edges.

10/ With the tip of a knife, but without cutting the puff paste, draw the top of the Twelfth Night cake.

11/ Make a little hole on the top of the Twelfth Night cake. This action will avoid that the Twelfth Night cake swells too much by cooking.

12/ Break one egg and only keep the yolk. Put it in a jar.

13/ Mix the egg yolk with just a few drops of water.

14/ With a special cooking brush, "paint" the top of the Twelfth Night cake with the egg yolk.

15/ Put the Twelfth Night cake in the oven during 30 minutes.

Then, bon appetit and... long live the King or the Queen !
